December 6, 2015 at The Strand

for 40 persons

PROSCIUTTO-WRAPPED PEARS

wedges of ripened pears wrapped in prosciutto

& roasted until the meat is crispy & the fruit soft & sweet

finished with sage

SEASONAL GREEN-BALLS

red kale, turnip tops, fennel tops & parsley

mixed with organic eggs, local feta cheese & panko breadcrumbs

hand-rolled & gently sautéed in olive oil

BEET-PICKLED DEVILED EGGS

farm-fresh organic eggs pickled in apple cider vinegar & beet juice

then halved & filled with a mix of

kewpie mayonnaise, yolk, mustard, curry powder & chives

topped with a crunchy beet chip

JEAN-GEORGES VONGERICHTEN’S SQUASH TOAST

seasonal roasted market squash, local goat cheese

& onions caramelized in maple syrup, served on crispy toastettes

garnished with fresh mint.

PIGS IN A TWIST

beef sausage spiral-wrapped in buttery puff pastry,

sprinkled with sea salt & baked until golden brown

served with a mustard dipping sauce

SMOKED SALMON CRISPS

crunchy tuiles piped with herby cream cheese

& topped with smoked salmon, chives & a squeeze of fresh lemon

FRENCH APPLE PUFFS

flaky puff pastry cups topped with roasted apples

& sprinkled with rosemary & lime zest sugar

glazed with apricot preserves

PUMPKIN CUPCAKES

organic pumpkin mini muffins spiced with cinnamon, nutmeg, ginger & cloves

topped with cream cheese frosting
