October 30, 2015 at The Bosco, Williamsburg

Menu for 25 persons

ROAST CHICKEN
chicken breasts brined, brushed with melted butter,
seasoned with a garlic-paprika rub & roasted

ROAST MUSHROOMS
mixed mushrooms roasted with olive oil, fresh thyme & flaky sea salt

SWEET POTATO MASH
sweet potatoes boiled until soft, then whipped
with nutmeg, butter, sea salt & brown sugar

STRING BEANS
crunchy & crispy french green beans blanched & then pan-seared,
sprinkled with fish sauce

CARAMELIZED ONIONS
baby red onions halved & slow-roasted with butter, sugar, salt & red wine vinegar

PUMPKIN BREAD
pumpkin bread muffins flavored with ripe banana and sugar,
spiced with cloves, cinnamon, cardamom & allspice

Menu for 50 persons

SLOW-ROASTED SALMON
salmon brushed with butter, sprinkled with lemon-pepper,
& roasted two hours

QUICHE
spinach, cheddar, parmesan & sauteed red onion mini quiches in phyllo dough

BROCCOLI SLAW
broccoli slaw with ribboned yellow carrots,
cranberries, red onion & toasted almonds
tossed in a buttermilk dressing with mayonnaise, apple cider vinegar & shallots

Menu for 16 persons

RIGGIDANELLA
dome of thin eggplant strips fried in olive oil
& stuffed with alternating layers of fried eggplant,
bechamel sauce & pasta tossed in a sweet & spicy tomato sauce
baked in a ramekin & served upended

BEEF & ZUCCHINI MEATBALLS
beef meatballs with shredded zucchini, fresh breadcrumbs,
pancetta & fresh herbs
slow-cooked & served in a tomato & fresh basil sauce

SIMPLE SALAD
mixed fresh greens & thinly-sliced bell peppers
with a red wine vinaigrette

December 2015 at Pilot Fiber, Tribeca

Menu for 18 persons

CHICKEN PARMESAN
brined chicken breasts coated in seasoned panko & baked
served with homemade tomato sauce & a heap of garlicky pasta

HEARTY VEGGIE SALAD
mixed fresh greens, shredded organic carrots, mandolined radishes
& an herby ball of fresh goat cheese!
dressed in a red wine vinaigrette
